Get Ready for 2007 National Honey Month; Consider Trying Something New!
The honey industry will once again celebrate National Honey Month in September 2007. In recent years, NHB has provided materials for beekeepers and other honey industry members to send to their local media to publicize honey month.
During previous Honey Months, some beekeepers have hosted Honey Month or Honey Day events at local botanical gardens, nature museums or other venues. This year, NHB will provide information to help host such events.
Also available for Honey Month promotions are a new honey poster and bookmarks. To order Honey Month information, call 1-800-553-7162 or email at order@nhb.org.
Happy Anniversary Stickers Available
NHB 20th anniversary stickers are available for purchase. The stickers are similar in shape, size and color to the “Honey I Love You” stickers. The stickers are $10.00 for a roll of 1,000 (call 1-800-553-7162 to purchase).
NHB Announces Voluntary Quality Assurance Program
NHB is launching the honey industry voluntary quality assurance program. The first phase of the program is the extracting facility survey, which uses a survey developed by honey producers. The survey is modeled after the Food & Drug Administration’s Good Manufacturing Practices (GMP), which honey producers are currently required to meet. The survey rates the quality levels for various extracting facility components and practices, including building conditions, sanitary facilities, transportation and storage, equipment, personnel and pest control.
Upon completion and successful survey scores, Quality Assurance certificates will be issued. The certificate could be posted for display in extracting facilities and honey shops and could be used in marketing honey.

Check It Out: Honey Locator Gets a Face Lift
Some major renovations were recently made to NHB’s honeylocator.com website. The site has a new look, is easier to use and includes some new benefits for both honey consumers and honey suppliers/listees. The database of information about honey locator listees has been expanded to include additional items sold by listees. A new benefit for listees, each honey locator listee/supplier will be featured in rotation as the “Featured Supplier” for the day, with their name and brief company description posted on the honeylocator.com home page, with a link to their full page.

Culinary Educators Eager for Honey Information
NHB’s participation in the 2007 Center for the Advancement of Foodservice Education (CAFÉ) Leadership Conference in June proved an excellent opportunity to provide honey education for culinary educators. NHB has sponsored five CAFÉ workshops, which resulted in publicity and education opportunities during the leadership conference. Sea Scallops in Honey Gastrique (honey reduction) and Honey Poached Peaches with Honey-Sweetened Mascarpone Cheese was served at the conference opening reception. In addition, a honey varietal tasting was conducted, which included comb honey – a first for many attendees.
The conference was held at the Scottsdale Culinary Institute in Scottsdale, AZ. Participation in the conference ties in with NHB’s long-term strategy to establish a solid presence for honey in U.S. culinary schools.
New Featured Chef: Alice Weingarten, Key West, Florida
It’s local lore that to truly taste Key West, one must dine at Alice's Key West restaurant. Alice being Chef Alice Weingarten, NHB’s new featured chef on its web site at www.honey.com. Bon Appètit magazine described Weingarten’s style as “New World Fusion Confusion,” a whimsical mélange of Asian, Mediterranean and Caribbean dishes, with her mother’s meat loaf thrown in for good measure.
Alice’s featured honey dishes—Brazilian Samba Salad with Citrus-Lavender Honey Vinaigrette and Cool, Silky Yuzu-Honey Cream (served with fruit, or grilled fish or chicken) testify to this flair for blending global flavors. Why honey? “Since honey is produced in nearly every country in the world, I put it to good use throughout my menu. Depending on the application, I use honey’s mellow sweetness to complement fruity, tart, spicy, peppery and exotic. It’s a natural,” says Alice.
Weingarten has received numerous culinary awards. She was recognized as Top Hotel Chef of South Florida (1999), named as a Top Ten Chefs of South Florida (1999) and received an invitation to prepare dinner at the prestigious James Beard House in New York City (2000). In 2001, Weingarten was made an Honorary Faculty Member and Distinguished Visiting Chef by Johnson & Wales University, North Miami.

NHB recently added a new feature to its www.honey.com web site. Each month “Consumer Honey Buzz” provides informative articles, quick and creative honey tips and timely recipes. The July “Honey Buzz” features summer grilling with honey and pampering pets with homemade honey shampoo!

National Ice Cream Month; Make It with Honey!
Many people seek out ice cream for a sweet and icy treat during the long, hot “dog days” of summer, making the month of July a natural for National Ice Cream Month. As a tie to Honey Month, NHB distributed a monthly trend alert with recipes using honey in making homemade ice cream. The alert is sent to various media editors throughout the U.S. In addition, an internet search reveals many recipes for ice cream using honey in celebration of National Ice Cream Month. (Fun Trivia: Some sources credit Roman Emperor Claudius Caesar with first creating ice cream by mixing snow with fruit and honey.)

20 Years of Sweet Success: Looking Back
In 2007, NHB is celebrating its 20th anniversary. NHB will periodically highlight in BeeMail various milestones accomplished throughout the last 20 years.
June 1988 -
“Just Add Honey, Make More Money” is the theme of NHB’s first foodservice ad campaign. The two-page ad includes a collage of successful honey products on one side and honey salad dressing, honey baked goods and menu ideas using honey on the other. The ads appear in June-December issues of Restaurants and Institutions and Bakery Production and Marketing.
July 1989 -
NHB announces programs to promote the second year of National Honey Month. NHB releases recipes to newspapers across the country, and honey trivia cards are sent to radio stations and televisions personalities. NHB also sends foodservice industry decision makers Honey Month notices announcing the availability of “Honey I Love You” promotional material for school foodservice directors and foodservice distributors.
