Barbecued Pork Sate

YIELD: Makes 6 servings

INGREDIENTS

1/4 cup - onion, minced

1 T - ground coriander

1/3 cup - honey

1 tsp. - salt

1/2 tsp. - black pepper

1/2 tsp. - garlic powder

1/4 tsp. - ground red pepper

3 T - fresh lemon juice

1/4 cup - soy sauce

1 1/2 lbs. - boneless, lean pork

3 - pita bread, cut in half and opened

DIRECTIONS

In a shallow bowl, or zippered gallon bag, combine all ingredients except pork and pitas.

Cut pork into 1-inch cubes. Add to marinade and mix well. Cover and refrigerate 10 to 12 hours or overnight, stirring several times.

Thread meat onto 6 skewers and grill over medium coals, turning once. Cook 4 minutes per side, or until fully cooked.

Serve hot in pita bread.

TIP

Chopped onion, tomatoes, shredded lettuce, crushed pineapple and/or sesame seeds may be used as additional pita fillings.
