Berry Rhubarb Sauce

YIELD: About 4


2 cups (12 ounces) chopped rhubarb (12 ounces)
6 ounces raspberries
6 ounces strawberries
¼ cup water
3 tablespoons plus 1 teaspoon honey (more as needed)


In a saucepan, combine all ingredients. Bring to a boil and simmer on medium heat for about 20 minutes, stirring frequently, until sauce has thickened and reduced. Remove from heat to cool. Refrigerate.
