Honey Braised Red Cabbage

YIELD: Makes 2 servings

INGREDIENTS

2 T - canola oil

4 T - bacon, diced small

4 T - yellow onion, thinly sliced

1/2 lb. - red cabbage, thinly sliced

1/4 tsp. - kosher salt

1/8 tsp. - ground black pepper

4 T - honey

1 T - brown sugar

4 T - apple cider vinegar

1 cup - red wine

1 cup - water

3 T - Granny Smith apple, peeled, cored, and diced small

1 - cinnamon stick

2 T - red wine vinegar

DIRECTIONS

Render the bacon with the canola oil in a medium-sized pot, and add the onions. Cook slowly until the onions are tender.

Add cabbage, salt, and pepper.

Add the brown sugar, honey, wine, and apple cider vinegar, cinnamon stick, and simmer for a few minutes. Then add the apples.

Bring to a boil, cover with parchment paper or foil, and braise in 375º F degree oven until the cabbage is tender, about 60 minutes.

Once the cabbage is tender, reduce the cooking liquid until it is syrupy. Finish with the red wine vinegar.

Adjust the seasoning and serve immediately.
