Honey Chai Delight

YIELD: Makes 1 serving

INGREDIENTS

3 oz. - chai honey (recipe below)

2 oz. - coconut milk

star anise, for garnish

1 1/2 oz. - dark rum, optional

For Chai Honey:

2 bags - Chai Tea

1/2 cup - clover honey

1 cup - hot water

DIRECTIONS

Combine all the ingredients in a cocktail shaker with ice.

Shake vigorously.

Strain into an iced glass.

For Chai Honey:

Steep chai tea bags in hot water for 4 minutes. Remove tea bags and stir in the honey while the tea is still hot so it can properly dissolve. Bottle and refrigerate until needed.

TIP

Mixologist’s Note: For a lighter, fizzier version, add 1 oz. club soda and stir.
