Honey Jerk Chicken

INGREDIENTS
Honey Jerk Chicken - Honey Jerk Chicken
1 tsp. - Oregano, dried
1 tsp. - Cayenne Pepper
1/2 tsp. - Black Pepper, ground
1 tsp. - Salt, Kosher
1/4 tsp. - Cinnamon, ground
1/8 tsp. - Allspice, ground
1 tsp. - Cumin, ground
1 tbsp. - Buckwheat Honey
3 tbsp. - Oil, blended
8 oz. - Chicken Breast, trimmed
Assembly: - Assembly:
All-purpose Flour, as needed
4 4.5oz. balls - Pizza Dough
6 oz. - Ricotta Cheese
4 oz. - Pizza Sauce
8 oz. - Honey Jerk Chicken
DIRECTIONS
Honey Jerk Chicken
1) Preheat grill.
2) In a mixing bowl, combine the jerk chicken ingredients except for the chicken. Mix thoroughly.
3) Rub the chicken down with the jerk seasoning mixture.
4) Cook the chicken on the grill until cooked through. About 8 minutes each side.
5) Remove from grill and cool. Once cool, dice the chicken into 3/8 x 3/8 inch pieces. Reserve for assembly.
Assembly
1) Preheat the oven to 450 degrees Fahrenheit.
2) On a floured, flat baking sheet roll out 1 of the pizza dough balls. It should stretch to about 6 inches in diameter. Dock the dough with a fork to prevent too many bubbles from forming during the cooking process.
3) Spread 1/4 of the ricotta cheese on half of the dough.
4) Add the pizza sauce over the ricotta cheese and top with chicken and mozzarella cheese.
5) Repeat the process for each of the dough balls.
6) Place the calzones in the oven and cook for 18 minutes.
7) Remove from the oven and using a basting brush, brush the top of the calzones with honey and top with sesame seeds.
8) Return the calzones to the oven and cook for an additional 3 to 5 minutes.
9) Remove from the oven and serve immediately.
