Spicy Honey Glazed Parsnips
YIELD: Makes 5 servings
INGREDIENTS
12 1/4 oz. - parsnips
1 1/2 tsp. - vegetable oil
1/4 tsp. - salt
1 tsp. - pepper, ground
1/4 oz. - butter
1 1/2 tsp. - honey
1 1/2 tsp. - apple cider vinegar
1/4 tsp. - crushed red pepper
DIRECTIONS
PRE-PREP: Clean parsnips, slice parsnips into 1/2-inch slices, melt butter, combine with honey, apple cider vinegar and crushed red peppers
Toss parsnips in large bowl with oil, season with salt and pepper. Place on sheet tray in a single layer. Roast in 425°F about 20 minutes until softened and lightly browned.
Remove from oven and drizzle with butter and honey mixture. Transfer to hotel pan and serve.
