Stir-Fried Zucchini and Carrots

YIELD: Makes 4 servings

INGREDIENTS

1 T - vegetable oil

3 medium-sized - carrots, julienned

3 medium-sized - zucchini, julienned

1 small - onion, vertically sliced

2 T - honey

1 1/2 tsp. - lemon juice

1/2 tsp. - fresh lemon peel, grated

salt and pepper, to taste

DIRECTIONS

Add oil to hot skillet; add carrots, zucchini and onion and stir-fry until vegetables are crisp-tender. Stir in remaining ingredients and cook 1 minute longer.
