Flatbread Bites with Crunchy Kale, Feta & Honey Lemon Glaze

YIELD: Makes 20 bites

INGREDIENTS

For Honey Lemon Glaze:

1/3 cup - honey

zest and juice from 1 lemon

3 T - white balsamic vinegar

1 tsp. - freshly ground pepper

For Pizza:

4 cups - kale, washed and trimmed of any large stems

2 T - olive oil, divided

2 tsp. - honey

1/2 tsp. - kosher salt

1/4 cup - grated parmesan

1 1/2 tsp. - Italian seasoning

1 tsp. - crushed red pepper

1 lb. - store-bought pizza dough, thin crust

2 oz. - Feta cheese, crumbled

DIRECTIONS

Preheat oven to 425°F.

Combine all the ingredients for the Honey Lemon Glaze in a small saucepan and cook on medium until reduced by half, 12-15 minutes, set aside to cool.

Chop the kale into 2” pieces and toss with 2 T of the olive oil, honey and salt. Massage the kale a bit and set aside.

Spread the pizza dough over a sheet pan into a rectangle and brush with the remaining olive oil. Sprinkle the Italian seasoning and half of the Parmesan cheese over the dough, bake for approx. 8 minutes.

Add the kale, feta cheese, remaining Parmesan cheese, and crushed red pepper evenly over the flatbread. Return the flatbread to the oven for 6-8 minutes or until golden brown and crispy.

Drizzle the flatbread with the Honey Lemon Glaze and serve warm or room temperature.

TIP

If you are unable to locate thin crust pizza dough, just roll and stretch the dough a bit to create a thinner crust.
