Hash Brown Cheddar Latkes with Honey Stewed Apples

YIELD: Makes 4 large waffles

INGREDIENTS

2 - gala or fuji apples, cored and sliced

2 T - butter

1/4 tsp. - nutmeg

pinch - kosher salt

1/4 cup - honey

1 (20 oz.) pkg. - refrigerated hash browns

1 cup - cheddar cheese, shredded, divided

2 - eggs, beaten

1 tsp. - salt

additional honey for serving

1/2 cup - sour cream

2 - scallions, chopped

DIRECTIONS

Preheat the waffle iron, preheat the oven to 275°F.

Heat butter over medium heat and sauté the apples until they just begin to soften, add the nutmeg, salt and honey, continue to cook for another 5 minutes. Set aside and keep warm.

Mix the hash browns, 1/2 cup of the cheddar cheese, egg and salt until incorporated.

Lightly oil the waffle iron and spoon a heaping 1/2 cup of hash brown mixture onto the iron and spread out a bit with the measuring cup or a spatula, cook until golden brown and crispy, about 10-12 minutes. Transfer each waffle to a sheet pan and sprinkle with 2 T of the shredded cheese, place in the oven to keep warm as you continue with the other waffles.

Serve each waffle topped with the stewed apples, a dollop of sour cream, scallions and a drizzle of warm honey.

TIP

These waffles would be great with chopped Honey Baked Bacon sprinkled on top. You can also make smaller ones if you prefer and serve 2 to a serving.
