Honey Banana Bread

YIELD: Makes 12 servings

INGREDIENTS

1/2 cup - honey

1/3 cup - margarine

1 tsp. - vanilla

2 - eggs

3/4 cups - whole wheat flour

1/2 cup - unbleached flour

1/2 cup - rolled oats

1 tsp. - baking powder

1 tsp. - nutmeg

1/2 tsp. - salt

1 cup - ripe banana, mashed

1/2 cup - walnuts, chopped

DIRECTIONS

Cream honey and margarine in large mixing bowl until fluffy. Beat in vanilla. Add eggs one at a time, beating well after each addition.

Combine dry ingredients. Add alternately with bananas, blending well. Stir in walnuts.

Spoon into greased 9x5x3-inch loaf pan.

Bake at 325°F 50 to 55 minutes or until wooden pick inserted near center of loaf comes out clean. Cool completely before slicing.
