Honey Drizzled Breakfast Pizza

YIELD: Makes 1 Pizza, 4 portions

INGREDIENTS

For Breakfast Pizza:

1/2 lb. - breakfast sausage

1 tsp. - vegetable oil

1 T - wildflower honey

as needed - all purpose flour

12 oz. - pizza dough

3 - cooked or scrambled eggs

1 cup - mozzarella cheese

For Sage-Honey Drizzle:

1 T - sage, minced

1/4 cup - wildflower honey

For Assembly:

1 each - breakfast pizza

1 cup - washed baby arugula

as needed - sage-honey drizzle

DIRECTIONS

For Breakfast Pizza:

Preheat an oven to 450°F.

In a heated sauté pan, add the sausage and oil. Cook the sausage. Break the sausage into small pieces with a spoon or spatula. When the sausage is fully cooked, add 1 T of honey and set aside.

On a floured, flat cookie sheet roll out the pizza dough. It should stretch to about 16 inches in diameter. Dock the dough with a fork to prevent too many bubbles from forming during the cooking process. Top the dough with 1/2 of the cheese, bake for 6-8 minutes.

Remove pizza from the oven and add remaining cheese, sausage, and scrambled eggs. Bake an additional 10 minutes until edges are browned.

For Sage-Honey Drizzle:

Combine sage and honey together and mix thoroughly. Set aside for assembly.

To Assemble, Top Pizza:

Top pizza with arugula and a drizzle of sage-honey. Serve immediately.
