Honey Gochujang Wings

YIELD: Makes 8 servings

INGREDIENTS

For Honey Gochujang Wings:

2/3 cup - honey

2/3 cup - gochujang sauce

24 each - chicken wings, patted dry with a paper towel

1 cup - rice crispies

as needed - cilantro leaves

as needed - chili threads

2 cups - Lime Ginger Dipping Sauce, recipe below

For Lime Ginger Dipping Sauce:

1/2 tsp. - lime juice powder

1 cup - mayonnaise

1 cup - sour cream

2 T - lime juice

2 T - ranch powder

2 tsp. - ginger puree

1/4 cup - green onion, julienned

1/2 tsp. - kosher salt

DIRECTIONS

For Honey Gochujang Wings:
In a small saucepan, prepare the honey gochujang sauce for the wings. Place the honey and gochujang sauce in a small saucepan. Place it on the stovetop and turn the heat to low. Using a rubber spatula, stir the mixture constantly until combined and hot. Do not boil or simmer. Set aside to cool to ambient. Using a rubber spatula, stir the mixture constantly until just heated through and thoroughly combined. Do not boil or simmer. Remove saucepan from heat and set aside to cool to ambient. Set aside for later use.

Place the chicken wings in a fryer basket and lower into the fryer. Fry for 8 minutes. The wings should be golden and crispy. Remove wings from fryer and transfer to a paper towel lined mixing bowl. Toss gently with a paper towel. Remove the paper towel and add the honey gochujang sauce to the bowl. Toss wings to fully coat in sauce.

Add the rice crispies and toss to coat. Add the cilantro and toss to coat. Remove from the mixing bowl and transfer to the serving plates. Garnish with chili threads. Serve with the lime-ginger dipping sauce. Serve immediately.

For Lime Ginger Dipping Sauce:
Add lime juice powder, mayonnaise, sour cream, lime juice, ranch powder, ginger puree, green onion, and salt to a bowl. Whisk thoroughly to combine.
