Strawberry Basil Avocado Toast

YIELD: Makes 4 slices


2 - ripe avocados

2 T - fresh basil, chopped

zest of 1 lemon

1/2 tsp. - kosher salt

3 T - honey, divided

2 T - butter

4 - pieces whole grain or rustic artisan bread

8 - strawberries, sliced

1 T - poppyseeds

additional honey for drizzling


Preheat the oven to 375ºF.

Remove the pit from the avocado and scoop out the flesh into a bowl. Smash along with the basil, lemon zest, salt and 1 T of the honey

Melt the butter and remaining honey together in a small bowl in the microwave. Brush the honey butter mixture on both sides of each slice of bread and place on a sheet pan in the oven. Watch carefully and turn after 6-8 minutes on each side or until toasty, remove from the oven.

Spread 1/4 of the avocado smash onto each slice of bread and top evenly with the sliced strawberries. Sprinkle the poppyseeds on top and serve with additional honey for drizzling.


The avocado honey smash would also be great on a poppyseed bagel with the strawberry slices.
