YIELD: Makes 1 serving

INGREDIENTS

1 cup - coconut water

1/2 cup - pineapple chunks, canned or frozen

1/2 cup - banana

2 T - honey

1/2 tsp. - coconut extract

toasted coconut

3 T - rum or tequila, optional

DIRECTIONS

In blender, combine all ingredients except toasted coconut. Blend on high speed until frothy; pour into a 16-oz. glass and sprinkle coconut on top.
